Fresh Pear–Pecan Muffins

Choose pears with plenty of flavor when you make these muffins. My first choice: buttery Boscs, dead-ripe. Number two would be the intensely fruity, fine-fleshed Comices. Bartletts are more widely available, but when cooked, less flavorful. There are no spices in this recipe to mask the pears’ delicate flavor, no vanilla or almond extract.

2 cups sifted all-purpose flour

½ cup sugar

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup moderately coarsely chopped pecans

1 (8-ounce) carton (1 cup) sour cream

¼ cup milk

2 large eggs

1 cup finely diced peeled and cored pears (about 2 small or 1 large; see headnote)
