I’m so happy to hear that my letters have helped motivate you to consider moving forward with the cafe idea. And I agree, there is something very powerful about making change happen. I think you should absolutely go for it! It seems to me that you have a huge amount of creativity and enthusiasm, and it would be a shame to let that go to waste. Perhaps I could even come and pay you a visit once the cafe is up and running! As regards a trip to Japan, why not do both? The cafe and Tokyo? A word of advice from an old man (who is no Madame Zargo, but who has over 70 years’ life experience): You’re only young once, so live your life. Besides, life would be pretty boring if we knew the answers to everything.

Regarding a cake for your friend, personally I think Sachertorte is overrated unless you can get your hands on the real thing (i.e. in Vienna). The original recipe is famously secret, so I’d be doing you a disservice to encourage you to bake one. However, the Hotel Sacher isn’t the only one with a secret recipe for the most delicious chocolate cake. In fact, I have one of my very own, which I am happy to share with you. I borrowed Frank’s typewriter to copy it out, and I’ve added a few scribbled tips to help you along the way. A few of the ingredients might sound odd, but trust me, they work.

This cake regularly won the annual village fete baking competition and it’s delicious, if I say so myself. I’ve kept the recipe very close to my chest for all these years (which is why I didn’t get a member of staff to make a photocopy), but I’d like to share it with you as a small thank-you in return for the bedspread!
