9. Preheat the oven to 191°C/375°F. Fill a large pastry bag (45.7-cm/18-in) fitted with a 1.1-cm/0.44-in fine star tip (#865) with the choux paste. Pipe the paste into 6.4-cm/2.5-in logs with 2.5-cm/1-in spacing on the baking mat or parchment paper [9]. Brush the top with egg wash using a gentle dabbing motion [10].
10. Bake at 191°C/375°F for about 15 minutes until the éclairs are puffed up. Reduce the temperature to 177°C/350°F and bake for another 15 minutes until the éclairs are golden brown. Turn off the oven and leave the éclairs in the oven undisturbed for another 10 minutes. Remove the baked éclairs from the oven and let cool completely.
