ingredients:
2 tbsp lemon juice
2 tsp lime juice
1/2 tsp vanilla extract
1 C 7UP, (or other lemon-lime soda)*
1 1/2 C unsalted butter
3 C sugar
5 eggs, room temperature
zest of 3 large lemons
zest of 6 medium limes
3 C flour
1. Preheat oven to 350 degrees.
2. In a glass, add juices and vanilla extract to the 7UP. Set aside.
3. Beat butter with an electric mixer on a medium-slow speed while slowly adding sugar. Continue until mixture is fluffy, about 3 minutes.
4. Crack eggs into a separate bowl and add to batter one at a time. Then beat on medium speed for an additional 2 minutes.
5. Add zests.
6. Turn the mixer speed to low. Beginning and ending with the flour, add 1/3 of the flour to the mixing bowl, then 1/2 of the 7UP mixture, alternating until all ingredients are mixed. The batter will look slightly curdled. Don’t worry, that’s normal.
7. Pour batter into a big ol’ bundt pan that has been coated with a baker’s cooking spray that includes flour (or greased and floured).
8. Bake until just done, about 55 minutes or until inserted cake tester or skewer comes out clean—check cake often to be sure not to over bake.
9. While the cake is baking, make the 7UP glaze (see below).
10. When the cake is baked, cool in the pan for 10 minutes before inverting onto a plate. (If cake still resists, cool an additional 15 minutes in the pan.)
11. Pour 1/2 of the 7UP glaze on the cake while the cake is still hot. Some of the glaze will be absorbed and some will pool around the bottom of the plate.
12. Once the cake is cool, drizzle the remaining glaze over the top. In 15 minutes, or when the glaze has set, re-plate on a clean cake plate.
