• Here’s a tip from the bakers: To keep the fluted pie crust from sinking down into the pie during baking, do not stretch the rolled-out dough when transferring it into the pie plate. And be sure the flute stands only 1 inch high. When blind-baking the crust, always weigh it down with pie weights.

• Depending upon how large your bananas are and how high you pipe the cream, you may need to trim the length of the banana halves slightly.
