Teriyaki Salmon (Broiled salmon)

Teriyaki is a method of cooking in Japan where food is marinated and then broiled. This particular fish dish remains moist and tender due to the sweet-savory marinade that does not overpower the delicate salmon flavor.

Yields: Serves 4

Ingredients:

4 medium salmon steaks

½ cup soy sauce

2 tbsp mirin

2 tbsp sesame oil

2 tbsp brown sugar

1 tbsp ground ginger

Method of Preparation:

Place the soy sauce, mirin, sesame oil, brown sugar and ginger into a bowl and stir to ensure the sugar is dissolved.

Put the salmon steaks skin side up in a deep dish or tray. Pour the marinade over the salmon, making sure the steaks are well coated.

Place in the refrigerator for one to two hours until well marinated.

Preheat the broiler, put the salmon into a broiler pan and broil on each side for about 2 minutes.

Serve with vegetables of choice and steamed rice.
