Prepare the topping. In the bowl of a stand mixer, add in the gelatin and 2 ounces of water. Whisk to mix everything together.
In a saucepan set over medium heat, add in 2 ounces of water, white sugar, and cream of tartar. Stir well until the ingredients are evenly mixed. Cook it until it reaches a temperature of 240â. Remove this from the heat and pour it into the bowl with the gelatin mix. Add in the pure vanilla and a dash of salt. Beat on the highest setting until it is thick in consistency.
Drop the marshmallow mix by the dollops into the pie crusts.
