Avocado Chicken Casserole

Ingredients

4 Small Avocados, peeled

8 Boneless Chicken Thighs, cooked

1 Medium Pepper

1 Medium Onion

8 Oz. Cheddar Cheese

8 Oz. Sour Cream

1 Tbsp Frank's Red Hot

Salt & Pepper to taste

Directions

1. Preheat oven to 350 F. Bake the cooked chicken thighs for 1 and half hours, cover with some water and pan fry until the juices are clear.

2. Cut the peeled avocado in half and then slice into thin strips.

3. Line the bottom of a greased baking dish with avocado slices. Keep any extra.

4. Cut the onions and peppers into strips and pan-fry until caramelized.

5. Get a large bowl. Place the chicken in it and flake apart.

6. Add the rest of the ingredients, as well as any extra avocado and then mix.

7. Spoon the mixture over the slices of avocado. Bake for 20 minutes. Remove and serve.
