Calf’s Head Fricasseed

Clean and half-boil a calf’s head. Cut the meat into small pieces and toss with gravy, water, herbs, an onion, and mace. Add in a boiled cockscomb or a sweetbread. Season with pepper, nutmeg, and salt. Add in flour and butter and boil. Remove the herbs and onion, and add some cream, but do not boil. Serve with bacon bits.

I sat in front of the fire and darned socks, repaired pant hems, stitched holes, and reattached buttons. My eyesight isn’t the best, and it was difficult seeing using nothing more than candlelight and the fireplace. My hands were shaky from all of the scrubbing and I had a piercing headache that made my vision blurry.

9pm: Are you people really that dirty?

More water in the sinks for washing up. Beds were turned down and space heaters turned on. Dirty clothes were picked up and put into baskets. Coats were hung up.

10pm: Bedtime

Zzzzzzzzz.

5am: What fresh hell is this?

It was nigh impossible to get out of bed. Every part of my body ached. My hands were swollen from all of the hot water, soaps, and scrubbing. I had random bruises over my body that I didn’t remember earning, and my knees were swollen and bruised. My stomach was eating itself from hunger. My guts were protesting the pound of bread I’d eaten the day before, and I normally don’t ever drink that much beer in one day, let alone when I’m working that hard. I didn’t drink any water during the previous day (just tea and beer), so my tongue was practically sticking to the roof of my mouth. My lips were cracked and bled when I yawned.

I dragged myself out of bed and decided that, if I’d been born in the Regency, I’d have become a prostitute long before becoming a maid-of-all-work.
