14 When the dough has doubled in volume, tip out of the basket or colander onto the bread peel or prepared baking sheet. (O)
15 Gently peel away the linen or towel. (P)
16 Take a pair of sharp kitchen scissors and snip cuts into the surface of the bread in a circular pattern. (Q)
17 Slide the bread into the preheated oven on its baking sheet, or if using a baking stone, slide it from the peel onto the hot stone. Pour the reserved cupful of water onto the hot roasting pan and lower the oven temperature to 220°C (425°F) Gas 7.
18 Bake for about 30 minutes, or until golden brown.
19 To check if the bread is baked through, tip it upside down and tap the bottom – it should sound hollow.
20 If it is not ready, return to the oven for a few minutes. If it is ready, set it on a wire rack to cool.
