Mini Sausage Quiches
Makes 4 dozen
Ingredients
8 oz. hot ground Italian sausage
2 tbs. dried minced onion
2 tbs. minced fresh chives
8 ct. can refrigerated crescent roll dough
4 beaten eggs
2 cups shredded Swiss cheese
1 cup cottage cheese
1/3 cup grated Parmesan cheese
Directions
In a skillet over medium heat, add the sausage and onion. Stir frequently to break the sausage into crumbles as it cooks. Cook for 8 minutes or until the sausage is well browned and no longer pink. Remove the skillet from the heat and drain all the excess grease from the sausage. Add the chives to the skillet and stir until combined.
Lightly flour your work surface. Remove the crescent dough from the can in one long rectangle. Place the dough on your work surface. Press any seams and indentations closed. Cut the dough into 48 equal pieces.
Lightly spray two 24 count miniature muffin tins with non stick cooking spray. Press each piece of the crescent dough into the muffin cups to form a crust. Spoon 2 teaspoons sausage into each crust.
In a mixing bowl, add the eggs, Swiss cheese, cottage cheese and Parmesan cheese. Whisk until combined. Spoon 2 teaspoons egg filling over the sausage in each crust. Preheat the oven to 375°. Bake for 20 minutes or until a knife inserted in the center of the quiches comes out clean. Remove the pans from the oven and cool the quiches in the pans for 5 minutes. Remove the quiches from the pans and serve.
