Rose Hip Jam

Rose hip jam is delicious and simple to make. It’s best to use dried rose hips, but be sure they are seedless. You can buy dried seedless rose hips, but if you’re using your own, either deseed them by hand or press them through a jelly sieve to remove the seeds. Cover the rose hips with 2 to 3 inches of fresh apple juice or cider. Let soak overnight at room temperature. The next morning, you should find that all the juice is absorbed, leaving a thick, sweet, juicy jam in the jar. You can add freshly grated ginger, powdered cinnamon, and other spices, but it’s really good enough to eat as it is. Store in the refrigerator.
