Lemon and poppy seed

2 tablespoons sunflower oil

3 tablespoons plus 1 teaspoon caster (superfine) sugar

1 medium egg

zest and juice of 1 lemon

4 tablespoons self-raising (self-rising) flour

1 tablespoon poppy seeds

In your mug, mix together the oil, 3 tablespoons of sugar, and the egg and lemon zest using a fork until smooth. Add the flour and poppy seeds, and mix until just smooth.

Microwave for 1 minute 20 seconds, or until risen and springy to the touch. Set aside to cool while you make the drizzle.

Meanwhile, mix 1 tablespoon of the lemon juice with the remaining 1 teaspoon of sugar to make a drizzle. Prick the cake using a fork and pour over the drizzle. Leave for 10 minutes for the cake to soak up the drizzle, then dig in and enjoy.
