14. Sweet Mascarpone-Parmesan Pizza

Mascarpone cheese is great for desserts but don’t get it wrong, you can also use it for pizzas. Ideally, use it with sweet toppings like fruits.

Cook Time: 15 mins

Serves: 4

Ingredients:

2 tbsp mascarpone cheese

1 tbsp caster sugar

¾ tsp vanilla bean paste

1 pizza crust

1 to 2 tbsp grated Parmesan cheese (optional)

24 blackberries

1 tbsp flaked almonds

12 mint leaves

½ tsp icing sugar

Instructions:

Preheat the oven to 425 F.

In a bowl, mix the mascarpone cheese, caster sugar, and vanilla bean paste. Spread the mixture on the pizza crust.

Top with the Parmesan cheese, blackberries, and almonds.

Bake for about 10 to 15 minutes or until the cheeses have melted.

Take out the pizza, garnish with mint leaves and dust with icing sugar. Slice and serve.
