Mini Pavlovas with White Chocolate–Coated Popcorn
These decadent mini pavlovas were one of the three 72 Miniatures that I made for the finale of The American Baking Competition. We each had to pick a food that represents our home state and somehow incorporate that food into one of the three desserts. After much research, I found out that in 2004, the state snack food for Illinois was popcorn. When I was developing this recipe, I thought, “How cool would it be to make little bags of popcorn?” So I made mini pavlovas and filled them with sweetened whipped cream. Then I coated popcorn with red, white, and blue chocolate. The judges absolutely loved these, and they definitely helped ensure my win!
6 large egg whites
1/2 teaspoon cream of tartar
2 cups sugar
12 ounces white chocolate, chopped
12/3 cups heavy cream
Red and blue food coloring
1 to 2 cups freshly popped popcorn
