3 Cut open the vanilla pod lengthways and scrape out the seeds. Combine the vanilla with the egg yolks, drained curd cheese, the melted but cooled butter, the egg liqueur and the milk. Combine the flour, cornflour and baking powder and gradually stir into the curd cheese mixture.

4 Beat the egg whites until stiff. Gradually add the sugar and continue beating. Fold the egg whites into the curd cheese mixture. Stir in the lemon juice and spread over the pastry base. Peel the apricots, cut into segments and place on top of the curd cheese mixture.
