Zach’s Fortune Cookies

Ingredients:

2 egg whites, room temperature

½ cup sugar

½ teaspoon almond extract

1 teaspoon vanilla extract

½ cup flour

¼ teaspoon salt

2 or 3 drops sesame oil or melted butter

Milk if needed

Directions:

1. Preheat oven to 375°

2. Print out fortunes and cut into strips. Be creative or use old sayings like “The apple doesn’t fall far from the tree.”

3. Whip egg whites and sugar on high speed until frothy with electric mixer.

4. Lower mixer speed and add ingredients one at a time, mixing well between additions.

NOTE: You are trying for the consistency of pancake batter. If batter is too runny, add a bit of flour. If it’s too thick, add a bit of milk. (You may tint with food coloring. Zach did.)

5. On a cookie sheet, place a Silpat or a sheet of non-stick sprayed aluminum foil.

6. Drop a spoonful of batter on the prepared baking sheet and use finger or offset spatula to spread it into a circle about 3 inches in diameter.

7. Bake 5-7 minutes until edges are well browned

8. While warm, put fortune or folded dollar bill across the cookie.

9. Make ½ fold, and fold again along the flat side by pushing edges down a bit for the dent. You may bend cookie over the edge of a measuring cup to help with second fold.

10. Place in muffin cup to set, pressing ends toward each other to fit the cup.

11. Repeat until all cookies are folded.

12. Let cool.
