Preliminary research findings suggest that high brix fruit does not raise blood sugar to the degree that low brix fruit does. This should be common sense. Higher brix fruit has more complex carbohydrates and higher trace nutrient content. This has significant ramification regarding diabetes, glycemic index, insulin resistance and nutritional value for the body. New Zealand research by Mr. Peter Floyd, founder of eCOGENT, shows that the higher the pasture brix, the higher the profit per acre. Higher brix grass means that the cow will get more nutrients for each mouthful of grass she eats. Whether the pasture is low brix or high brix, the cow can only take so many mouthfuls of grass per day, so common sense would suggest that the more nutrient she gets with every mouthful the healthier she will be and the more milk she will produce.

So how do we get higher brix pastures, fruits, and vegetables? We get it by applying sound biological science on the farm. Interestingly enough, appropriate farm management that produces high brix, nutrient dense food, additionally, by default, addresses all the environmental agendas.
