40. Vanilla chiffon with Moscato peaches & elderflower frosting

Serves 10

A friend of mine remembers picnics with her grandmother in Centennial Park, who would bake several chiffon cakes to bring along. In her memory the chiffons were spectacular, towering as high as the sky, and while it’s true things are always magnified when we are small, I have no doubt this was a curious exhibition in the middle of a park. They inspire in me a theatrical notion of swans gliding on the pond in synchronised formation, awestruck by those chiffons, with little squirrels standing on each corner of the picnic blanket to protect the cakes from a gust of wind that might whisk them into oblivion.

A cake like this can leave an indelible mark on someone’s memory, as it did with my friend. The truth is, it’s not really about the cake; it’s the nurturing gesture that baking bestows, and if you have someone like that in your life – or indeed you are that person – it’s a gift.
