lime drizzle cake with coconut frosting
If you want to make this look extra special, add a few shavings of toasted fresh coconut to the top.
175 g/1½ sticks butter, softened
175 g/¾ cup (caster) sugar
175 g/1⅓ cups self-raising flour, sifted
3 eggs
finely grated zest of 2 limes
Lime drizzle
75 g/½ cup icing/confectioners’ sugar
freshly squeezed juice of 2 limes
Coconut frosting
175 g/6 oz. cream cheese
5 tablespoons coconut cream
2 tablespoons icing/confectioners’ sugar
grated zest of 1 lime (use a zester, if you have one, rather than a fine grater)
an 18-cm/7-in. round pan, 7 cm/3 in. deep, lightly buttered and baselined with baking parchment
