Alzira’s Chicken
Serves: 4-6
A mild combination of chillies, vinegar and sugar gives this dish an intriguing flavour. It is a colourful dish that can be ‘dressed up’ for a party with green peas or rings of capsicum. The addition of sultanas and cashew nuts makes it ‘royal’.
1 medium chicken cut into pieces
1½ tbsp ghee (clarified butter) or cooking oil
4 large onions, finely sliced
¼ kg (5 medium) tomatoes, chopped
½ tbsp vinegar
Salt to taste
Sugar to taste
Finely ground:
8 dried red Kashmiri chillies, deseeded
1 tsp turmeric powder
8 cloves garlic
Heat ghee or oil in a pan and fry onions till soft. Add tomatoes and ground masala. Fry for 2 minute. Add chicken and continue frying till dry.
Add sufficient hot water to cook chicken till tender.
Add vinegar, salt and sugar. The taste should be hot, sweet and sour. The gravy should be thick and tomato-red in colour.
Pour into a dish and serve.
