Shanghai is where East eats West.

Purists may scoff at the thought of eating sourdough pizzas, avocado toast and artisanal hand-made burgers in China. They are wrong to do so. Shanghai has always been a city open to absorbing and consuming culinary influences from far and wide and the quality of many Western-style establishments goes above and beyond the expectations (and the stereotypes), to feed hungry locals and soothe homesick expats alike.

One of the most popular destinations for Western food is Found158 (158 Julu Lu), a submerged pit on the edge of the former French Concession. Home to a wide selection of restaurants and bars, it has been hilariously dubbed ‘foreigner park’ (lao wai gong yuan 老外公园) and is a strange parody of the Chinatowns found elsewhere in the world.

The highlight of Found158 is Homeslice, a New York-style pizzeria serving up 50cm pizzas as well as individual slices that will have Americans crying into their paper napkins. It’s that good.

In Shanghai, many of the restaurants in this chapter would have been unimaginable a few years ago, but today, the world’s flavours have been transported to this city, analysed and unpicked, restyled and reimagined, arguably better than the originals.
