CHICKEN, BROCCOLI, AND SWISS STOVETOP BAKE

(Serves 4-6)

1 tablespoon olive oil

1-2 pounds boneless skinless chicken thighs, cut into 1” pieces

Salt and pepper

8-ounce package button mushrooms, loosely chopped

1/2 onion, loosely chopped

1 teaspoon chopped fresh parsley leaves, plus more for garnish

2 cups broccoli florets

4 slices Swiss cheese

Heat olive oil to medium high heat in a large, flat-bottomed nonstick sauté pan. Add chicken thigh pieces, season liberally with salt and pepper. Cook for 2-3 minutes until chicken thighs start to brown. Add mushrooms, onion, and parsley, toss and sauté 5-7 more minutes, until chicken is cooked through and mushrooms are soft. Season with salt and pepper.

In a separate steamer pan, steam broccoli pieces until tender when pierced with a fork, about 8-10 minutes. Toss broccoli pieces in with chicken and mushrooms. Season once more with salt and pepper. Flatten out contents of pan and lay Swiss cheese slices evenly over top. Cover, turn heat down to low, and let simmer for 5-10 minutes until cheese is melted. Garnish with parsley and serve immediately.
