2. Portion off two-thirds of the dough. Add 3 to 4 drops yellow food coloring to tint it pale yellow and mix well to evenly distribute the color.
3. Divide the remaining dough in half. To one half, add 10 to 12 drops yellow food coloring to tint it deep yellow. Again, mix well. Leave the remaining half un-tinted.
4. Flatten the three colors of dough into separate disks and wrap each disk tightly in plastic. Chill the light yellow dough 1 to 2 hours before shaping into a log in Step 5, below; chill the other two disks closer to 2 hours before rolling in Steps 6 and 7.
