Note: Before measuring the jam, stir it well until any lumps dissolve and it is smooth. Puree it if it is very chunky.

A STEP AHEAD

The dough can be wrapped in a double layer of plastic and then a layer of heavy-duty foil and frozen for up to 1 month. Defrost it in the refrigerator for at least 5 hours or overnight before proceeding as directed from Step 3.

PARTY ON

Spring Fling

WARM(ISH) WEATHER SWAP

It’s spring (or if it isn’t, go ahead and pretend it is)! Throw open your windows and let in some fresh air! Wear large hats! Rent a bunny (real or otherwise)! Whatever the month, make this the time to shower your senses with crisp, light cookies and refreshing cups of tea. Whip up some Jam-Filled Lemon Sandwich Cookies (dig out your tulip-shaped cookie cutter), and for friends in need of ideas, suggest Green Tea Cookies with Almond Cream Filling (page 114), Blueberry-Almond Biscotti (page 151), and Pistachio Sacristans (page 83). Light and seasonal party fare might include grilled fruit skewers, asparagus spears wrapped in prosciutto, goat-cheese-and-herb crostini, veggies with lemon thyme dip, and cucumber sandwiches. Get your kettle puffing and set up a tea bar next to your cooktop, with mugs, a selection of tea bags, sweeteners, lemon slices, and cream or milk. And don’t forget the iced tea (see page 212).

For displaying cookies, buy dime- store Easter baskets. Check out www.efavors.com and www.weddingchannelstore.com to score on incredibly inexpensive party favors like teapot tape measures and personalized tea bags (printed with the name of your party and the date). The array of spoon-themed items at The Spoon Sisters (www.spoonsisters.com) might also strike your fancy. White lace gloves are optional.

Oh, and another idea altogether: Evoke springtime in Japan with a cherry blossom (hanami) party. Serve vegetable sushi, yakitori (skewers of grilled meat), steamed edamame, wasabi peas, nori crackers, and ginger ice cream. Those green tea cookies should be on the swap table, naturally.
