Chicken Curry with Spinach

Here’s another memorable chicken curry recipe loaded with onions and garlic, and served with brown rice and wilted spinach.

Serving Size: 4

Preparation Cooking Time: 45 minutes

Ingredients:

• 2 tablespoons vegetable oil

• 1 white onion, sliced into thick rings

• 2 cloves garlic, crushed and minced

• ¼ cup dry white wine

• 1 lb. chicken breast fillet, sliced into strips

• Pepper to taste

• 1 tablespoon curry powder

• 5 cups spinach

• 2 cups brown rice, cooked

• Lime wedges

Instructions:

1. In a pan over low heat, pour the oil and cook the onion and garlic for 20 minutes.

2. Increase heat.

3. Pour in the wine.

4. Cook for 3 minutes.

5. Add the chicken to the pan.

6. Cook for 2 minutes.

7. Season with the pepper and curry powder.

8. Add the spinach to the pan.

9. Cook for 1 minute.

10. Serve the chicken with the rice.

11. Garnish with the lime wedges.
