Toasty Caramel Meringue Tart

This tart came to life at Cakeboi during the COVID-19 lockdown. We attempted so many things to try to keep our business alive. Some worked, and others did not. One saving grace was creating high tea boxes for pickup and delivery. The idea was a hit, and during this tough time we were able to keep things afloat because of them.

Nan would serve this tart when we went to her house for our weekly barbecues, and it was something we all looked forward to. To finish the tart, Nan would toast the meringue in the oven. However, at Cakeboi we use a blowtorch (which I call the flamethrower). It creates the same effect, but I like to live dangerously.

Makes one 10-inch (25-cm) tart

1 serving Go-To Sweet Pastry Crust, blind baked

Caramel Filling

1 cup + 2 tsp (250 ml) milk

1 cup (200 g) brown sugar

2 tbsp (15 g) all-purpose flour

3 egg yolks

1 tsp vanilla extract

¼ tsp salt

1 tbsp (14 g) butter

Meringue

3 egg whites

¾ cup (170 g) caster sugar

⅛ tsp cream of tartar
