Naomi’s Pineapple Cupcakes

This is a favorite summer cupcake, great for summer holidays. Having a summer birthday, this cupcake is what I always wanted as my birthday cake. Once you bite into it, you get that sweet summer taste. And who doesn’t love a cupcake with an umbrella in it?

Makes 12 cupcakes

2½ cups all-purpose flour

1½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

3 large eggs

1¾ cups granulated sugar

1 cup vegetable oil

1 teaspoon pure vanilla extract

¾ cup sour cream

1½ cups canned crushed pineapple, drained slightly
