The amount of water used will determine how thick the porridge/soup becomes. Don’t use too much rice, as it will swell up considerably. Place the rice and water in a heavy-bottomed pan with a tight-fitting lid. After briefly bringing the rice to a boil, it is important to simmer it on the lowest possible heat for 2 to 4 hours. This will ensure it doesn’t catch or burn. The longer the rice soup cooks, the more it will strengthen your qi and your blood. If you want to eat the rice soup for breakfast, you can cook it the previous evening and reheat it gently in the morning. To finish, add milk, butter or ghee, honey, and a little salt, and then add further seasoning to taste.
