Over the course of the next few hours, Paolo bares his soul. We move onto the balcony and he turns on the fire when the sun goes down. We sit and talk for hours. He tells me everything about his life right now, how it’s all spiraling out of control. How he feels adrift and lost, and how he doesn’t know how to bring things back under control without making a lot of people very unhappy.

He asks me about myself and I share a little, but I keep bringing the conversation back to his life and his business, urging him to keep on talking. Getting everything off his chest and out in the open.

One thing is absolutely clear: Paolo is struggling for real. He’s lost his compass. And he doesn’t know how to get it back.

“Paolo, when was the last time you think you were really happy? I mean like truly free and happy?”

He leans back and looks up at the stars, as if really thinking about it. “It’s hard to pick a spot in time. I mean, it’s not like I was happy one day and then this one thing happened and pushed me over the edge. I think it was more like a progression leading to today.”

“That makes sense.”

“But if I could roll everything back to a really fantastic moment? I think I’d have to say it was the year that my show got really big. It was summer, two years ago. When I did this special with these kids.”

I smile. “I remember that one. You did a show about working with a bunch of kids from that summer camp. The teenagers from that wilderness program for troubled boys.”

“Yeah.” He smiles as his eyes take on a dreamy quality. “I worked with them for two weeks. They filmed it like a documentary so it aired over one long episode. Those kids, man. They really took a shine to food. They loved learning the chemistry and being creative with flavors. Two of them went on to CCI, actually. One got a scholarship, and the other one… I paid for him to go.”

“That’s really special,” I say. And I mean it. Aside from the fact that he impacted those kids’ lives for the better, it’s obvious how much it means to him that he did.

He cocks his head to the side. “I’m surprised that you saw that show. It wasn’t on the normal network channels.”

“Are you kidding? I think I’ve seen everything you’ve ever done.”

“Nah. You don’t have to say that to make me feel better.”

I lean forward and lean my elbows on my knees and look him in the eyes. “I never say things just to make people feel better. I’m serious. But I will share this with you now because I think you need to hear it.”

“Uh oh. Is this the part where you tell me I am a spoiled baby and I need to get back to work?”

“No. Not at all.” I slide my chair closer to his so we are face to face, our knees almost touching.
