Make the Catfish

Place the catfish in a shallow bowl suitable for marinating. Mix the buttermilk and the Head Spice together and pour over the catfish. Let the catfish marinate while the sofrito is cooking.

In a good-sized cast-iron skillet, add enough oil to cover the bottom of the pan and then add little more. Bring the oil to about 350°F.

Mix the cornmeal and dredge. Remove the catfish from the buttermilk marinade and coat very well with the dredge / cornmeal breading.

Very carefully lower each piece of catfish into the pan and fry it up. You are going to want to cook each side for about 3 minutes before flipping. Make sure the fish is golden brown before removing it from the pan and putting on the wire rack.

To finish the dish, top the catfish with large spoonful of sofrito and then a spoonful of slaw. As we mentioned, it’s even better if you layer it up over some grits.
