Although brandy is the traditional liquor in this English recipe, you can substitute rum or orange liqueur.

bake: 9 minutes at 350°F per batch

½ cup granulated sugar

½ cup butter

⅓ cup golden syrup* or dark-color corn syrup

¾ cup all-purpose flour

½ teaspoon ground ginger

1 tablespoon brandy

1 recipe Sweetened Whipped Cream (optional)

1 Preheat oven to 350°F. Line a cookie sheet with foil. Lightly grease the foil; set aside.

2 In a medium saucepan heat and stir sugar, butter, and syrup over low heat until butter is melted. Remove from heat. In a small bowl stir together flour and ginger; add to butter mixture, mixing well. Stir in brandy.
