In a separate bowl, combine the flour, brown sugar, salt, cinnamon, and ginger. Slice the butter into pats and add to the mixture. Mix the butter and the dry ingredients—except the oats—until blended. Add the oats and knead the mixture until it becomes clumpy. Sprinkle the topping evenly over the filling. Bake for 40 to 50 minutes or until the top is golden brown and the juices are bubbling.
