IRONICALLY, THE EXPLOSION OF interest in cooking and baking both as a pastime and source of entertainment has not resulted in an increase of culinary school enrollment. In fact, many culinary schools have been streamlining their classes or shutting down altogether in recent years. In 2017, the famous Le Cordon Bleu school closed all its US locations. One of the primary challenges these schools face is the rising cost of tuition versus the relatively low starting salaries of restaurant jobs. Financial aid can also be tough to get. There is also the fact that those interested in careers in the culinary world often have the option of getting on-the-job experience without formal training. Even so, people who prefer classes still have plenty of options. Schools like CIA and the Institute of Culinary Education (ICE) offer a wide variety of programs that cover the culinary arts, pastry arts, bread baking, cake techniques, and sommelier training. Some, like the International Culinary Center, offer more specific classes like farm-to-table culinary and Italian culinary. Increasingly, schools provide programs in hospitality management and instruction of the business side of the industry.

Programs offering associate degrees run two years, and many schools stipulate a certain amount of “real world” hours performed before a degree is granted. For instance, the New England Culinary Institute (NECI) requires between 135 to 495 hours of externship, depending on the degree level. The advantages of these schools, particularly for those with an interest in culinary arts but with little experience or connections, is that they offer comprehensive training and a network of connections that can be beneficial for many years to come. But, again, it doesn’t come cheap. ICE’s pastry and baking arts program, which offers eight-, ten-, and twelve-month options, costs $29,900 to $39,900.

The cost per semester at CIA for the Associate and Bachelor’s Degree Programs is $17,710.
