Garden of Eden on Concord Grape Bread

This sandwich is absolutely heavenly; hence, the name!

1 apple, peeled and thinly sliced

1/2 papaya, peeled, seeded and thinly sliced

1 banana, thinly sliced

1 kiwifruit, peeled and thinly sliced

2 tablespoons butter

4 slices Concord Grape Bread

1 cup Nut Butter of your choice

1 cup Real Apple Butter

1 cup manchego cheese

2 cups mesclun greens (spring mix)

> Prepare the fruits and divide them between two plates. (Cover and refrigerate if not using immediately.)

> Spread the butter on both sides of the Concord Grape Bread.

> In a skillet or on a griddle, grill the bread on both sides.

> On a plate, stack two slices of bread and cut them diagonally. On another plate, do the same with the other two slices. Remove the top slices and set aside.

> Spread the Nut Butter evenly over the bottom slices, followed by the Real Apple Butter.

> Sprinkle the manchego cheese over the sandwiches.

> Layer the fruits onto the sandwiches beginning with the apple, then papaya, banana, and kiwi.

> Divide the mesclun greens between the sandwiches. Cover with the top slices of grilled bread. Place a toothpick through each section to hold it together.

Yield: 2 sandwiches

The fruits in this bread are seasonal and sometimes may be hard to find. Feel free to substitute whatever fruit is in season in your area. The point is to load up on fruits and be creative.
