Method
1. Mix together condensed milk, lemon juice and zest and 2 egg yolks until thick.
2. Add and pour into pre-cooked pastry base.
3. Whisk 5 egg whites until firm stiff peaks.
4. Add sugar and whisk for further 1 minute.
5. Add to top of curd and bake in cool oven @ 160° for 45 mins.
Simple Apple Tart
Ingredients:
• Basic pastry dough (Refer to page 37 for recipe)
• Line a 9” ceramic dish and pre-cook for 20 mins
• @190° with ½ pastry.
• 5 large cooking apples
• 3oz/75g Granulated Sugar
