CHEESE AND HAM CROISSANTS

Again, this recipe works best with slightly stale croissants. We started to do these cheese and ham versions for Bastille Day at Borough Market, and they always sell out in the first few hours. This is another way of using up any leftover croissants by transforming them into something quite special and very delicious.

MAKES 12

1 batch of 12 croissants, 1–2 days old

12 slices of really delicious ham

300g mature Cheddar cheese, grated

100g smoked bacon lardons

500ml chicken stock (see method)

optional: chopped parsley
