SERVES 6 Nothing compares to the aromatic experience that fresh herbs deliver. While this recipe is great all by itself, without any herbs, it’s spectacular with basil, which I keep calling the new mint. Michael Schwartz, the owner and chef of Michael’s Genuine Food & Drink, loves this panna cotta. It speaks to his philosophy of straightforward flavors. Start with excellent ingredients, keep it simple, and you will have an awesome outcome.
1 cup heavy cream, at room temperature
1 vanilla bean, split (see note)
½ cup sugar
1 cup (packed) fresh basil leaves, washed and dried
1 tablespoon finely grated lemon zest
Pinch of kosher salt
1¼ teaspoons unflavored powdered gelatin
1½ cups buttermilk, at room temperature
1½ cups mixed fresh berries, washed and dried, for serving
Strawberry Consommé, for serving (optional)
