MOM’S SPONGE CAKE

This cake is a treasure from my mom’s recipe box. My mom didn’t do a lot of baking when I was growing up (she was extremely busy raising five kids!), but she was a master at making this beautifully tender sponge cake. To this day it remains one of my favorite cakes—soft and fluffy as a cloud, and simply perfect any time of the day.

MAKES ONE 10-INCH (25-CM) TUBE CAKE

188 g (1½ cups) cake flour

300 g (1½ cups) granulated sugar (preferably superfine), divided

110 g (½ cup) neutral vegetable oil, such as grapeseed or canola

½ tsp kosher salt

10 g (2 tsp) pure vanilla extract

10 large eggs, separated when cold but brought to room temperature before mixing the batter

¼ tsp cream of tartar
