How to Make Sugar Pieces and Extensions

1. Roll out the fondant or gum paste in small quantities (gum paste dries particularly quickly). Roll it so thinly that you can almost see through it. Using cutters of varying shapes and sizes, or a template, cut out as many pieces from the rolled-out paste as you can.

2. Arrange the pieces on a flat surface dusted with cornstarch and leave them in a warm, dry place until hard. Repeat this process if you need to make more extensions or sugar pieces to decorate the cake.

3. When the pieces are dry, brush them with petal dust, if desired, and arrange them roughly on the cake to ensure the design fits properly.
