Seaweed Colcannon

Colcannon is a traditional side dish in Ireland typically made by topping mashed potatoes with chopped scallions and cabbage, bacon bits and butter. In this recipe, we replace bacon with dulse.

Serving Size: 8

Preparation Cooking Time: 45 minutes

Ingredients:

• Water

• 3 lb. potatoes, sliced into wedges

• Salt to taste

• 1 cup dulse seaweed

• 5 tablespoons butter (unsalted)

• 2 cups cabbage, chopped

• 4 scallions, chopped

• 1 cup milk

Instructions:

1. Fill a pot with water.

2. Add the salt.

3. Add the potatoes and boil.

4. Reduce heat and simmer for 15 minutes.

5. Transfer the potatoes to a plate or bowl.

6. Mash using a fork or a potato masher.

7. Add the dulse to a bowl.

8. Cover with water.

9. Let sit for 15 minutes.

10. Rinse, drain and then chop.

11. Add the butter to a pot over medium heat.

12. Add the cabbage and dulse.

13. Cook for 4 minutes.

14. Stir in the scallions and cook for 1 minute.

15. Reduce heat.

16. Add the mashed potatoes and milk.

17. Season with the salt.

18. Mix well.
