Nordic Fish Pie
Serving Size: 4
Cooking time: 40 Minutes
Ingredients:
1 onion, chopped
2 garlic cloves, minced
2 tbsp butter
2 tbsp flour
2 cups milk, warmed
1¾ Lb cubed fish
1 cup frozen pea
zest of 1 lemon
1 tbsp dill, chopped
2-3 potatoes
Instructions:
1. Pan-fry onion and garlic in butter until soft. Sprinkle over flour and fry for another 2 minutes.
2. Stir in milk. Add cubed fish and cook until firm.
3. Add frozen peas and lemon zest. Sprinkle over dill.
4. Spoon into an ovenproof dish.
5. Grate potatoes and squeeze excess fluid from potato. Season and sprinkle over pie.
6. Brush with melted butter and bake at 356ºF for about 10-20 minutes, until potato is crisp and pie is heated through.
