To make a classic Reuben sandwich, place two slices of rye bread on a baker’s sheet. Layer each slice with Swiss cheese and corned beef. Broil until cheese is melted, then add a heap of sauerkraut (drain it first to keep the sandwich from getting soggy) to one slice. Just before bringing the two slices together, smother one side with this easy Russian dressing: In a small bowl, combine 1/2 cup mayonnaise, 1/4 cup sour cream, 1 T chili sauce, 2 t lemon juice, 1 1/2 t sugar, 1/4 t salt, 1/4 t paprika, and 1/4 t allspice.
