24. Banana-Pineapple Upside-Down Cake
INGREDIENTS:
â 3/8 cup (6 tablespoons) Butter
â ¾ cup Sugar
â 1 Egg
â ¾ cup Milk
â 2 cups All-purpose Flour
â 2 teaspoons Baking Powder
â ½ teaspoon Salt
â 1 Mashed Banana
â 1 cup Crushed Pineapple
â ½ cup Chopped Nuts
â â cup Butter
â â cup Brown Sugar
INSTRUCTIONS:
a) Cream 6 tablespoons of butter and sugar. Add the beaten egg and mix well.
b) In a separate bowl, sift together the all-purpose flour, baking powder, and salt.
c) Gradually add the dry ingredients to the butter mixture, alternating with milk. Mix until well combined.
d) Fold in the mashed banana.
e) In a separate small pan, melt â cup of butter and mix in the brown sugar.
f) Pour the melted butter and brown sugar mixture into the bottom of an 8-inch square pan or a small angel food pan.
g) Add the well-drained crushed pineapple and chopped nuts on top of the butter-sugar mixture.
h) Pour the batter over the pineapple-nut mixture.
i) Bake in a preheated oven at 350 degrees Fahrenheit for 20-30 minutes or until a toothpick inserted into the center comes out clean.
j) Enjoy your delicious Banana-Pineapple Upside Down Cake!
