Cute Croquembouches
The classic croquembouche – literally ‘something that crunches in the mouth’ – is a tower of crisp profiteroles, filled with crème patissière and drizzled with toffee, which is often served at a wedding or first communion. These minute versions, stuck together with vanilla custard and spun toffee, take a little time to put together, but would add a festive touch to a special tea party – and they’re tiny, so no need to share!
