Lambic

This is the base beer all the following beers are created from. This yellow to golden colored beer is usually hard to find in the states but every now and again you just may get your hands on one – I have before, and it was official. It’s the only one in this family of beers that is not blended and is served as is – straight. Uncarbonated, the flavors of apples, lemons, and other citrus flavors are side by side with a mouth puckering tartness as well as notes of earthiness, hay, goat, and barnyard.

I told you they were wild! I can see you looking at the book like, “what the fuck?” But trust me, if you are familiar with cheese and the aromas associated with them but know how good they are, then this is exactly the same. A lighter bodied beer that swaps bitterness with sourness. Sitting at 5-6.5% ABV, these beers can also be aged for years and enjoyed like vintage wine. You can sometimes find draft versions at bars that know what’s up.
