WHAT ARE THEY?

Quarter lime shells filled with a yuzu-flavoured shellfish jelly and a pan-fried scampi carpaccio, served cold.

TIME TO MAKE

Preparation: 1 hour

Cooking: 45 minutes

Resting: 6 hours

EQUIPMENT

Fine-mesh sieve

Piston funnel

Silicone mini-muffin tin

VARIATIONS

Replace the yuzu juice with lime zest, and the scampi with prawns.

ADVICE

Before adding the vegetables to the scampi shells, crush the shells with a rolling pin to enhance the flavour of the shellfish jus.
