Ingredients
1/4 lb. butter, softened
15 ounces flaked coconut
8 ounces cream cheese, softened
20 -23 ounces semi-sweet chocolate
2 lbs. confectioners' sugar
chips
1/4 tsp. salt
28 -30 unsalted almonds
1 1/2 tsps. vanilla
Directions
1. Combine the cream cheese with butter. Microwave for 47 seconds until soft.
2. Stir in the sugar gradually, vanilla and salt.
3. Fold in the coconut and combine well.
4. Leave in the freezer for 25 minutes.
5. Remove from the freezer and shape similar to eggs.
6. Lay the eggs on a parchment sheet covered with foil.
7. Place 2 nuts on each egg and press lightly.
8. Heat the chocolate in a boiler and allow to melt.
9. Coat each egg bottom in the chocolate and place on a platter.
10. Rub melted chocolate on top of each egg.
11. Gently ease out the eggs with a sharp blade and place on a parchment sheet lined with foil.
12. Leave in the freezer for the chocolate to harden.
13. Insert the eggs into paper muffin cups.
14. Cover with foil and leave in the refrigerator.
15. Enjoy.
