Popcorn Cupcakes

Makes 24 cupcakes

1 box white cake mix

Milk

1 teaspoon vanilla extract

1/2 teaspoon almond extract

4 cups popped popcorn

1 (16-ounce) container vanilla frosting

1 cup white chocolate chips

Preheat oven to 350 degrees F.

Make cake mix according to package directions, but substitute milk for water. Add vanilla and almond extracts to the batter and stir to blend.

Line 2 cupcake pans with paper liners and spray generously with nonstick cooking spray.

Divide batter evenly between 24 muffin cups using an ice cream scoop to keep the amount of batter equal between cups. Bake and cool according to package directions.

Fill a large bowl with the popcorn.

Frost each cupcake generously with frosting and then dip each frosted cupcake into the popcorn.

Add white chocolate chips to fill in the spots where popcorn did not stick to the frosting.
