Chocolate Shortcakes with a Peanut Butter Filling

We love peanut butter as a filling for these chocolate shortcakes, but if you want to use another filling, try some blackcurrant jam and thick cream instead. It’s important to chill the dough in the freezer so that it has time to firm up before baking.

MAKES 6 SHORTCAKES

FOR THE SHORTCAKES

340g (12oz) PLAIN FLOUR, PLUS EXTRA FOR DUSTING

2 tbsp COCOA POWDER

¾ tsp BAKING POWDER

¼ tsp SALT

80g (3oz) CASTER SUGAR

65g (2oz) UNSALTED BUTTER, CUBED

85g (3oz) MILK CHOCOLATE CHIPS

60ml (2fl oz) DOUBLE CREAM

1 tsp VANILLA EXTRACT

3 LARGE EGGS

30g (1oz) DEMERARA SUGAR
